Parameters Tested
As per FSS Regulations, chilli powder should be free from extraneous colouring matter – that is, free from added colours. In laboratory results, all brands were found free from extraneous colouring matter.
Moisture Content (% by weight)
As per FSS Regulations, moisture content should not be more than 11.0 per cent by weight. Less moisture means more shelf life for the food product and hence lower is better.
Ash Insoluble in Dilute Hydrochloric Acid
Ash insoluble in dilute hydrochloric acid is an indicator of dirt and dust in the food product – so, lower is better. As per FSS Regulations, on dry basis it should not be more than 1.3 per cent by weight.
For General Qualities
Packaging
Chilli powder shall be packed in clean, sound and dry containers made of metal or glass food-grade polymers. The packing material shall be free from any fungal or insect infestation and should not impart any foreign smell. Each container shall be securely closed and sealed.
Marking
The following information shall be clearly and indelibly marked on the label of each container/ packet:
- Name of the product
- Trade name, if any
- Name and address of manufacturer
- Batch or code number
- Net quantity in gram or Kg
- Month and year of manufacture
- The words ‘Best before’ (month and year to be indicated)
- Nutritional information
- FSSAI license number
- Logo indicating ‘vegetarian’ or ‘non-vegetarian’ status
- Storage information
- Maximum Retail Price (MRP)
- Customer-care details

As per Legal Metrology (Packaged Commodities) Rules, 2011, every package shall bear the name, address, telephone number, and email address, if available, of the person who can be – or the office that can be – contacted in case of consumer complaints.
